Aduki Bean Chilli recipe

just so I know where it is! Found this on a weight loss forum, apparantly aduki beans are very good for detoxing. The recip is fab although I used canned aduki beans from sainsburys as I’m useless at thinking of the next nights tea!!

Ingredients :-
Aduki beans (pre-soaked overnight or 8-10 hours) - I use half a bag of dried aduki beans
1 large onion (finely chopped)
olive oil or water to ‘fry’
3-4 garlic cloves (crushed)
1 tablespoon of tomato puree
1 tin of chopped tomatoes
3 teaspoons ground cumin
2 teaspoons ground coriander
1 heaped teaspoon turmeric
hot chili powder to taste (1-2 teaspoons)
1 OXO cube (any flavour, I use beef)
water

Method :-
Boil the soaked aduki beans for 20 minutes to soften them further and to remove the toxins, drain and rinse.
Lightly fry onion and add garlic.
Add aduki beans and mix with onion and garlic.
Add tomato puree, and dry herbs.
Add chopped tomatoes and OXO cube.
Add water as desired, or if mixture becomes too dry as it is cooking.
Bring to the boil and simmer for 60 minutes, stirring occasionally.
Serve with brown rice.

  1. ooh, lovely. Did you change any of the cooking times using the tinned beans then?

  2. erm probably about the same by the time I left it to simmer, went to “check e-mails” and then realised how long brown rice took!
